African cuisine – pure pleasure
German cuisine is becoming more and more international: sushi, couscous, börek and paella may come from foreign countries, but have long since found their way into German households. Would you like to try really exotic cuisine? Then think of sun, palm trees, desert and beach: Africa. African cuisine is varied, healthy and very tasty. And best of all: all the ingredients are also available in retail stores in Germany.
Simply exceptional
Refined ingredients and yet simple preparation characterize African cuisine. Lots of vegetables combined with exotic spices ensure the healthy and unique taste. Due to the influences of numerous colonies and cultures, South African cuisine is particularly versatile, low in fat, easily digestible and therefore very popular.
African snacks
In the following we present various African snacks that you can easily cook yourself with our recipes:
- Bobotie, the South African minced meat casserole: Mix 1 kg minced meat, 2 chopped onions, 2 tsp apricot jam, 1 dash of lemon juice, 2 tsp chutney, raisins and curry powder and fry everything in a pan. Place in a mold, whisk 3 eggs with 220 ml milk , pour over the mixture, place 3 halved bananas on top. Bake in the oven at 180 °C for about 40 to 50 minutes.
- The South African rice salad is simply part of it: Mix 250 g of cooked rice , 1 red & 1 green finely chopped pepper, 1 small finely chopped onion and 50 g of soaked raisins in a bowl and stir in 1/2 cup of yoghurt and mayonnaise. Refine this salad with fresh lemon balm.
- The peri-peri shrimp are perfect on a skewer : prepare the peri-peri sauce, which is typical for South Africa, with 2 chili peppers, 1 piece of fresh ginger , 1 clove of garlic and 4 tablespoons each of oil and lemon juice. Blend the ingredients in the blender. Let about 1 kg of raw king prawns simmer in the peri-peri sauce for 15 to 45 minutes. The longer the sharper. Thread the prawns onto skewers and sear them on both sides in the pan or on the grill.
Spicy horseshoe bread – original African recipe
Spicy horseshoe bread can be filled with either vegetarian or meat.
And this is how the spicy horseshoe bread is prepared:
- Mix 500g flour, 1 sachet baking powder and a pinch of salt with 30g small pieces of butter.
- Knead the dough with 125 ml each of water and milk.
- For the vegetarian filling, 250 g grated cheese, 1 tomato, 2 pickles, 6 olives, 1 pepper, 1 clove of garlic and 1 small onion are suitable. Chop the ingredients into small pieces and mix them all together with the cumin , turmeric and coriander.
- Roll out the dough about 1.5 cm thick to form a rectangle.
- Spread the filling over the dough and roll up.
- Form a horseshoe out of it and sprinkle with cheese.
- Bake in a preheated oven at 210°C for 15 to 20 minutes.
African sophistication: avocado salad
The avocado salad is also a must. The sauce is prepared with a chopped hard-boiled egg, chopped red onion, 1 tsp salt, lemon juice , 2 tbsp vinegar and 100 ml olive oil.
For the salad, slice 4 tomatoes and 3 avocados and serve with some iceberg lettuce. Serve with the sauce and some black pepper.
Healthy exotic refreshment
The refreshing ginger cocktail not only for hot days: peel 500 g fresh ginger and mix it with 50 g fresh peppermint. Pour 2 liters of water into a bowl and stir in the ginger and peppermint mixture.
Squeeze 1 pineapple, 4 oranges and 2 lemons and stir into the mixture. Season with 300 g sugar and serve ice-cold.
African dessert
For dessert, banana cakes are a must. To do this, puree 6 ripe bananas. Dissolve ¼ cup sugar in ¼ cup warm water and mix with 1 cup flour, some nutmeg and the mashed bananas. Fry small batches of the batter in hot sunflower oil.
