Can you reheat mushrooms?

We were always told by our mothers and grandmothers not to reheat mushroom dishes. Is that actually true? Read here whether you really shouldn’t reheat mushrooms or whether it’s a myth.

Warm up mushrooms, yes or no?

Yes, reheating mushrooms once is safe. The advice comes from a time when hygiene standards for the preparation and storage of food were not as high as they are today. Thanks to the invention of the refrigerator, reheating mushrooms such as button mushrooms or chanterelles is no problem today. Why is that?

Essentially, mushrooms consist of water and  protein . A perishable combination in which the proteins are decomposed by oxygen and bacteria and toxic decomposition products can form. Heat accelerates these unwanted degradation processes, while cold slows down this process. Accidentally consuming these toxins can cause  diarrhea  and  nausea  .

So how do you treat mushroom residue?

If you let the leftovers of the mushroom dish cool down as quickly as possible after the meal (e.g. in an ice water bath) and put them in the refrigerator immediately, they can last for the next 24 hours. Then you should heat the mushrooms well, to at least 70 degrees. However, you should never leave a dish with mushrooms at room temperature or keep it warm for a long time. Incidentally, this applies to fresh mushrooms as well as to canned mushrooms.
