Citron and orange peel

Citron and orange peel  taste  sweet and aromatic and can be found in every Christmas stollen and in many types of gingerbread; but they are also part of many breakfast cereals. The peel parts of these citrus fruits can be stored in a dry place in the kitchen cupboard for a long time due to the sugaring. You can also make lemon peel and orange peel fresh yourself, but you can’t actually get either of these from commercially available  lemons  or oranges.

It depends on the thick shell

Citron  is made from the thick-fleshed peel of the citron ( Citrus medica )  . Originally from Southeast Asia, this citrus plant is now native to the Mediterranean region. The sparse pulp of their fruits, which can weigh up to 2 kg, is hardly used fresh. The situation is different, however, with their yellowish-green to golden-yellow peel, which, in addition to lemon peel, is also very popular with perfume manufacturers or is processed into jam or liqueur. Lemon peel can also be found on the supermarket shelf under the name  Sukkade in the baking ingredients .

Orange peel  comes from the peel of the bitter orange ( Citrus aurantium). This fruit grows in almost all subtropical regions of the world. The bitter orange originated from a cross between the grapefruit and the  tangerine . Their fruits taste abominable fresh. In addition to the production of orange peel, the  fruit skin  of the bitter orange is also used as the basis for the English bitter orange marmalade and some liqueurs. The essential oils contained in it are also used in the perfume industry.

Make orange peel and lemon peel yourself

In order to obtain orange peel or lemon peel, the citrus fruit must first be peeled. The white parts of the skin should be removed as completely as possible, as they contain bitter substances. The bowls are then boiled with salt water, weighed and then put back into the pot together with the sugar. When making lemon and orange peel, as much sugar as the peel should be used.

Together with the sugar and some water, the shells are now left to simmer for an hour. Finally, the fruit skins have their typical, glassy appearance. The shells are then removed from the pot and left to dry. This can take several days. Finally, the shells are then crushed into cubes. In the supermarket or on the market, lemon peel and orange peel are sometimes sold in larger pieces. If these are on sale, you should choose the latter because they have more flavor.

Little kitchen tip

If you don’t like the taste of orange peel and lemon peel, you can easily substitute these baking ingredients. Suitable for this are, for example, baked fruit, dates, candied pineapple, dried sweet or sour cherries or  ginger . The dried fruit can be steeped in teajuice , or rum for a few days before use   .
