Creamy carrot soup with a healthy effect

Carrot Soup: Shopping List

For the carrot soup you need the following ingredients:

  • 1 kg of carrots
  • 400 grams of potatoes
  • 2 onions
  • 1 to 2 cloves of garlic
  • 5 cm fresh  ginger
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 TL chili powder
  • 250 ml coconut milk
  • 1 organic lime
  • 750 ml vegetable stock
  • salt and pepper

preparation

Step by step to the carrot soup:

  1. Peel and dice potatoes and carrots. Also peel and chop the garlic , onion and ginger.
  2. Heat the oil in a medium-sized saucepan and sauté the onions. Add garlic, ginger and chili powder. Stir in the curry powder and turmeric and roast for a minute.
  3. Put the potatoes and carrots in the pot and fill up with coconut milk and vegetable broth. Simmer for about half an hour until the carrots are soft.
  4. Puree the soup until creamy and season with salt, pepper and the squeezed lime juice. Enjoy your meal!
