Grill recipe: zucchini and tomato boats with feta

The barbecue season starts with the beautiful weather and meat, sausages and fish are being barbecued again in German gardens. But vegetables also cut a good and tasty figure on the grill. The zucchini and tomato boats with feta are suitable as a vegetarian main course when grilling or as a side dish.

The zucchini, tomato and pepper boats with feta can be arranged and prepared in aluminum foil, in aluminum trays for the grill or in extra ceramic trays.

Ingredients for zucchini and tomato boats with feta

For four people you need the following ingredients:

  • 1 large zucchini
  • 4 large tomatoes or a pack of cocktail tomatoes
  • 2 packages feta or 400 g feta
  • 4 cloves of garlic
  • olive oil
  • Pfeffer
  • Salt
  • Dried Basil
  • Italian herbs of your choice
  • 1 handful of fresh basil

preparation steps

That’s how it’s done:

  1. Tear off enough aluminum foil to  fold a boat afterwards  or have aluminum and ceramic bowls ready.
  2. Slice the tomatoes, slice the zucchini lengthwise.
  3. Drizzle olive oil onto the aluminum foil or into the bowls, spread out the zucchini, sprinkle over the feta, place the tomato slices on top.
  4. Season with salt, pepper and herbs,  chop the garlic  and sprinkle on top as well.
  5. Place the finished boats on the preheated grill, if the cheese runs easily, the boats are done.

Of course, you can also add aubergines or peppers if you prefer.
