Healthy energy booster: quinoa and vegetable pan
Whether for lunch or dinner, at home or “to go”, the quinoa vegetable stir-fry is the perfect dish. Here’s the recipe for four people.
Ingredients for the quinoa vegetable stir-fry
The following ingredients are required for the quinoa vegetable stir-fry:
- 150 g quinoa  (boil with 500 ml water or vegetable stock)
- 1 Zucchini
- 1 Paprika
- 1 Aubergine
- 1 bunch of spring onions
- 1Â onion
- 1 clove of garlic
- 1 EL Kurkuma
- 1 tbsp curry powder
- 2 Owner
- coconut oil
preparation steps
The quinoa pan is easily prepared in four steps:
- Dice the zucchini, peppers, eggplant and onion and sauté the crushed garlic clove in a pan with coconut oil.
- Then add the turmeric, curry and quinoa and sauté together for about ten minutes.
- Then stir in the eggs for two to three minutes.
- Cut the spring onions, sprinkle over the dish as a topping and enjoy.
