Mango and avocado salad: Superfood for summer days

Delicious immune booster: Mango and  avocado  provide the body with many nutrients and  vitamin C  and can support the immune system. The tannins in the mango can also prevent gastrointestinal problems. The unsaturated fatty acids in avocados help lower cholesterol levels naturally.

Mango-Avocado-Salad: Ingredients

For the delicious salad for four people you need:

  • 1 Mango
  • ½ cucumber
  • 1 Avocado
  • 50 g Rocket
  • Depending on your taste: coriander, parsley, chives
  • 1 chili pepper
  • 2 Tbsp Sesame
  • Salt
  • Pfeffer

The salad is refined with this dressing:

  • 1 tsp Chili Flocken
  • 100 ml olive oil
  • 1 THE Soybean
  • Juice of half an organic lemon
  • Juice of half an organic orange
  • 2  tablespoons honey  or agave syrup
  • Salt
  • Pfeffer

preparation

The preparation time is about 45 minutes. That’s how it’s done:

  • Peel the mango, remove the stone and cut into cubes. Roast the sesame seeds in a pan without fat and leave to cool.
  • Wash the cucumber and cut into thin slices. Then clean, wash and shred the rocket. Wash the chili and chop as small as you like. Then chop the herbs.
  • For the dressing, halve the lemon and orange, then squeeze. Mix in honey, chilli flakes, soy sauce and olive oil, season with salt and pepper.
  • Halve the avocado, deseed and remove the flesh from the skin. Then cut this into wedges.
  • Mix all the ingredients in a bowl, stir in the dressing and refine with sesame seeds.
