Rice pudding with pear compote: delicious and healthy

The time has finally come: the first ripe pears have been hanging on the trees since July. Not only do they taste delicious raw, the pome fruit is also perfect as a compote with rice pudding.

Late summer is pear season, even if some varieties are harvested as early as July. They are small vitamin bombs and particularly low in acid, so pears are also suitable for people with sensitive stomachs and for small children. Rice pudding with pear compote is a delicious and wholesome breakfast for the whole family.

Recipe for rice pudding with pear compote

Rice pudding brings back childhood memories for many people. In order for it to succeed, the right type of rice is crucial.

Ingredients for 4 persons:

  • 1 liter  milk  (alternatives such as soy milk are also suitable)
  • 250 grams of short grain rice
  • 1 vanilla bean
  • 60 grams of sugar
  • 1 pinch of salt
  • 4 medium pears
  • 1 cinnamon stick
  • juice  of a  lemon
  • 300 milliliters of water

This is how the pear breakfast is prepared:

  1. Pour the milk into a medium-sized saucepan. Add salt, 40 grams of sugar and the pulp of a scraped vanilla pod to the milk. The pod can also be cooked, but it must be removed before consumption.
  2. Gently bring the milk to the boil while stirring. add rice  .
  3. Bring the rice pudding to the boil briefly, stirring constantly to prevent it from burning.
  4. Simmer the rice pudding at a low temperature for about 25 minutes, stirring occasionally.
  5. Peel and quarter the pears. Remove core. Then cut into small cubes.
  6. Boil 20 grams of sugar and the cinnamon stick in about 300 milliliters of water. Add pear and cook for about 10 minutes. Remove from stove. Add lemon juice.
  7. Remove the cinnamon stick from the compote.
  8. Remove the rice pudding from the heat and remove the vanilla bean. Stir the pan constantly so that the rice pudding doesn’t stick when it cools.
  9. Divide the rice pudding into four bowls and put a large spoonful of compote in the middle.
  10. Depending on your taste, breakfast can be sprinkled with a little cinnamon. Enjoy your meal!
