Simply bake: Delicious strawberry rhubarb snails

Rhubarb is not only a delicious ingredient in baking and cooking. The body also benefits from the low-calorie vegetables.

The delicious strawberry-rhubarb snails are ideal with  coffee  and cake or as a small snack on bike tours with the family.

With this recipe you can easily bake 20 strawberry rhubarb snails for young and old!

Ingredients for Strawberry Rhubarb Snails

What you need:

  • 1.2 kg of flour
  • 250 g strawberry jam
  • 440 grams of sugar
  • Salt
  • 300 g Butter
  • 50 grams of fresh yeast
  • 200 ml lukewarm  milk
  • 4 Owner (M)
  • 4 sticks  of rhubarb

How to prepare the strawberry rhubarb snails:

  • For the crumbles, knead 500 g flour, 2 pinches of salt, 160 g sugar and butter into crumbles. Cover and chill for approx. 1 hour.
  • For the yeast dough: Mix 700 g flour, 180 g sugar and 2 pinches of salt. Crumble the yeast into the milk and dissolve while stirring. Add to flour mixture with eggs. Knead everything into a smooth dough. Cover the dough and let it rise in a warm place for about half an hour.
  • In the meantime, trim and wash the rhubarb and cut lengthwise into thin strips.
  • Knead the yeast dough and roll it out into a rectangle (approx. 45 x 35 cm). Spread with whipped jam. Lay the rhubarb strips diagonally on the dough. Sprinkle with 100g sugar. Roll up the dough from the long side. Cut the roll into slices approx. 3.5 cm wide. Spread on a baking sheet lined with parchment paper. Flatten slightly and sprinkle with the sprinkles. Let rise again for about 15 minutes.
  • Bake the snails in the preheated oven (electric stove: 180 °C, fan: 160 °C, gas: level 2) for approx. 25 minutes. Serve warm or chilled.
