Strengthens the immune system: oriental lentil stew

Warms on cold and windy autumn days: The oriental lentil stew tastes of distant countries and holidays – and still prepares the body for cold days in the sometimes dreary homeland. Lentils are high  in fiber , low in fat and provide the body with important B vitamins and iron. Ginger , cinnamon and chili are also said to prevent inflammation and thus support the immune system.

Recipe for oriental lentil stew: shopping list

For four to six servings of delicious lentil stew you need the following ingredients:

  • 2 THE OL
  • 1 onion
  • 1 tsp cinnamon
  • 2 cloves of garlic
  • 1 piece of ginger (about a thumb’s breadth)
  • 3 carrots
  • 6 small potatoes
  • 1 Paprika
  • 6 tbsp tomato paste
  • 300 grams of red lentils
  • 300 ml of tomato passata
  • 1 TL chili powder
  • 1 teaspoon ras el hanout spice mix (available in the supermarket)
  • salt and pepper
  • 500 to 800 ml vegetable stock

preparation steps

Prepared quickly and easily:

  1. Peel and finely chop the onions, garlic and ginger. Fry together with the oil until the onions are translucent.
  2. Peel potatoes and carrots, then dice. Also cut the peppers into small pieces. Add the tomato paste and red lentils and sauté briefly.
  3. Add broth and crushed tomatoes until vegetables are covered.
  4. Add the spices and cook until the potatoes and lentils are soft.

Tip: Served  with some yoghurt and  parsley  , the oriental lentil stew tastes even better.
