Vegan smoked salmon for healthy holidays

For many, the Christmas holidays are the epitome of culinary delights. These don’t always have to consist of meat or fish – there are also delicious alternatives for vegans. “Smoked salmon” made from carrots not only tastes fantastic, the dish is also particularly healthy.

The recipe for vegan smoked salmon is quick and easy to prepare. If you want to eat it on the holidays, however, you have to prepare the dish early enough. The “fish” should be stored in the refrigerator for at least 24 hours.

Vegan smoked salmon shopping list

For four people you need the following ingredients:

  • 700 g  carrots
  • 7 EL  Salz
  • 1 Nori-Blatt (Algenblatt)
  • 3 tablespoons white wine vinegar
  • 5 tbsp olive oil
  • 1 tbsp Liquid Smoke (available in larger supermarkets)
  • 100ml of water

To serve:

  • 4 slices of bread or baguette, depending on your preference
  • 150 g  vegan  cream cheese
  • Dill

Vegan smoked salmon – preparation

How it works:

  1. Preheat the oven to 200 degrees top and bottom heat. Spread 3 tablespoons of salt in a casserole dish. Wash the carrots (do not peel) and rub the still wet carrots with the remaining 4 tablespoons of salt. Then place the carrots in the casserole dish and bake for an hour until they are soft.
  2. Remove the soft carrots from the oven, carefully wash off the remaining salt and peel the carrots. Cut the peeled carrots into fine lengthways strips and place in a sealable container. Cut the nori sheet into four parts with scissors and place with the carrots.
  3. For the marinade, mix oil, vinegar, liquid smoke and water. Add the marinade to the carrots, mix well and seal tightly.
  4. Leave the marinated carrots to steep for at least 24 hours, but the taste will develop even better after 2 to 3 days. Stir the mixture from time to time.

Tip:  Serve the salmon with some cream cheese, dill or horseradish on a piece of bread and enjoy.
