Warms from the inside: Vietnamese Pho Bo noodle soup

The traditional Pho Bo noodle soup tastes fantastic, is not too heavy on the stomach and warms you from the inside on cold April days. The fresh food and ingredients conjure up a piece of Vietnam in the local kitchen. You can find the recipe here.

The preparation time of the Pho Bo soup is 30 minutes. She has to cook for an hour. The recipe is suitable for four people.

Pho Bo Soup: Ingredients

The following ingredients are required:

  • 30 g  of ginger
  • onions
  • 3 dried star anise fruits
  • cloves
  • 1 cinnamon stick
  • 1 tsp Coriander leaves
  • Black peppercorns or pepper
  • 500 ml beef broth
  • 4 capsules of cardamom
  • 4 tbsp soy sauce
  • 4 tablespoons fish sauce
  • 1 tablespoon brown sugar or a dash of maple syrup
  • 300 g Rumpsteak
  • 250 g travel noodles
  • 100 g mung bean sprouts
  • 1 red chili pepper
  • 1 organic lime
  • 1 bunch coriander

It’s that easy:

  1. Peel and slice the onions. Wash ginger, peel if necessary and also cut. Roast both ingredients in a pot without fat with the spices (cloves, cinnamon sticks, star anise, pepper, coriander seed, cardamom).
  2. Deglaze with the broth, add soy sauce, fish sauce and sugar or maple syrup and simmer for about half an hour.
  3. Cut the rump steak into thin strips and cook briefly. Meanwhile, prepare the rice noodles and, after washing, cut the spring onions into rings. Pour the broth through a sieve.
  4. Wash and dry sprouts. Wash and cut the chili pepper and coriander as well. Put all the ingredients in a plate or bowl, pour in the broth and garnish with the lime.

The Pho Bo soup can be enjoyed on cold days, and the soup is also suitable for a light lunch or dinner in summer due to its fresh ingredients and spiciness.
